Here's a quick and easy holiday recipe from a Mexican household! Gorditas are a fluffy pastry traditionally filled with beans, cheese or meat. These are sweetened condensed milk gorditas that are a winter time favorite. I made them Zacatecas style (state that my father is from) where we like our food a little extra toasted!
Ingredients:
1 egg
1 tbsp baking powder
1 tbsp vanilla extract
1/2 cup of milk
1/2 cup of vegetable oil
1 can of sweetened condensed milk
3 - 4 cups of all purpose flour
Instructions:
1. Mix egg, baking powder, vanilla extract, milk, and vegetable oil.
2. Add condensed milk and mix well.
3. Add 2 cups of flour and mix with hands. Continue adding flour until mixture is no longer sticky (but not too stiff either).
4. Heat a pan to low heat.
5. Flatten the dough into circles (or heart shape!) with hands.
6. Add to the pan and flip when desired golden brown color is reached.
Allow to cool. Enjoy!

¡Aquí hay una receta rápida y fácil de un hogar mexicano! Gorditas son pasteles esponjosos rellenos tradicionalmente con frijoles, queso o carne. Estas son gorditas de lechera que son las favoritas durante el invierno. ¡Los hice al estilo Zacatecas (estado de mi padre) donde nos gusta nuestra comida un poco más tostada!
Ingredients:
1 huevo
1 cucharada polvo para hornear
1 cucharada vainilla
1/2 taza de leche de almendra
1/2 taza de aceite vegetal
1 lata de lechera
3 - 4 tazas de harina
Instructions:
1. Mezcla el huevo, polvo de hornear, extracto de vainilla, leche y aceite vegetal.
2. Agrega la leche condensada y mezcle bien.
3. Agrega 2 tazas de harina y mezcla con las manos. Continúa agregando harina hasta que la mezcla ya no esté pegajosa (pero tampoco demasiada rígida).
4. Calienta un sartén a fuego lento.
5. Aplana la masa en círculos (¡o en forma de corazón!) Con las manos.
6. Agrega al sartén y voltea cuando se alcance el color marrón dorado deseado.
Deja enfriar. ¡Disfrutar!
